We sat down with Executive Chef Mattia Agazzi of Michelin-starred Gucci Osteria da Massimo Bottura in Beverly Hills, California. Welcome to Gucci Osteria in Los Angeles — the Californian outpost of the Florence, Italy flagship. From Italy to California, the richness of tradition is celebrated in the most dynamic way. From the Italian region of Lombardy, Mattia Agazzi uses only the finest American and Italian produce, which he playfully interprets through his own stories, moods and dreams, day by day, plate by plate.

Tell us about what your morning routine looks like, and how you like to end your day? 

Once I’ve completed my morning meditation, I head into the restaurant to enjoy a cappuccino with my team, when we share stories and plan for the day ahead.

After the kitchen has officially closed, I cherish the thirty minute walk back to my apartment, when I get the opportunity to unwind and reflect.

Do you have any awards or achievements you’d like to mention?

I will forever be proud of Gucci Osteria’s Michelin-star, which I see to be a reflection of my team’s tireless hard work and devotion, and that motivates me to always be optimizing, personally and professionally, day after day.

Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?

Whenever I spend time with Massimo Bottura, I learn something new. The depth of our relationship may seem obvious to some, but I truly would not be where I am today without his support. I encourage all aspiring chefs to remain patient in their journeys; Rome wasn’t built in a day!

What do you typically cook at home for yourself or your family? 

I typically gravitate towards light and simple dishes that will energize me for the day, like white fish, or grilled vegetables. That said, at this very moment, I’m at home cooking carbonara.

What’s that strangest food combination you’ve ever tried? And, did you like it?

Our former Pastry Chef, Tamara Rigo, recently developed a dessert for the menu at Gucci Osteria Beverly Hills that fuses lemon, capers, and seaweed, a combination she dreamt up on her trip to Turkey, Greece, and Italy. Strange and unexpected to some, the dish blew my mind, and instantly transported me to the regions Tamara drew inspiration from. I’m a big advocate of experimenting with flavors you discover when you travel.

What cocktail or beverage do you enjoy most?

Without a doubt, the Classic Italian Negroni.
