We sat down with Executive Chef Xavier Toro of Rare 125 in the Miramar neighborhood of San Juan, Puerto Rico. Consistently ranked as one of the “hottest” restaurants in San Juan. Rare 125 offers an expanse of carefully selected dishes from their famous Beef Tenderloin Au Poivre, to fresh seafood, like wild-caught salmon.

Tell us about what your morning routine looks like, and how you like to end your day?
My Morning routine starts doing exercise being gym or beach tennis, then preparing food for my 4-year-old and take him to school. Then start with visiting the construction of my new restaurant. Then buying produce and visiting my other 3 restaurants. Like to do all before 12pm that when people, employees and suppliers start calling and demanding.
Do you have any awards or achievements that you are you most proud of?
My most proud achievement are my kids I have 2. Also, my sommelier diploma to pair it whit my kitchen skills will be next. The continuity of my team is also one of my proudest achievements.
Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
I believe I admire here on the island chef Peter Schintler because of his consistency and dedication, and celebrity chef Anthony Bourdain I really think this hard working, wild and adventurous life. For the new aspiring chef my advice is work hard, dedicate yourself, visualize success, grow, and don’t try to cut corners. If you do that you be successful in this tough hard-working environment.
What do you typically cook at home for yourself or your family?
I am a simple chef just my everyday rice and beans, tostones (plantains) and any protein I have left in the refrigerator.
What’s a food trend that you’re loving right now and why?
I believe and love the new international BBQ trend like Korean and Thai BBQ are just here to stay, really love the flavors and sides dishes combination.
What’s that strangest food combination you’ve ever tried? And, did you like it?
The strange combination I try should be oysters, uni and caviar in a Korean BBQ joint and I love it.

Wine, wine and wine then a vodka dirt martini shake extra dry.

I cook for many celebrities, not many stories just keep it simple and do what I always do.
