We sat down with Executive Chef Gladis Lizarraga of TRIO in Palm Springs, California. Centrally located in the Uptown Design District, along North Palm Canyon Drive — TRIO offers modern California cuisine that is both seasonally-inspired and handcrafted.

1. Tell us about what your morning routine looks like, and how you like to end your day?
My morning routine at TRIO starts by getting a nice cup of coffee and checking how many covers we have for the day. First, things need to be done for service; portioning proteins, then moving on to sauces and main prep list for service.

I end the day doing orders and writing the prep list for the following day.
2. Do you have any awards or achievements that you are you most proud of?
My best reward is by doing what I love; cooking, and making people happy. I have received recognition throughout my career for my culinary talent and innovation. Some of these awards include accolades for my contributions to the culinary industry, expertise in specific cuisines or techniques, and leadership in the kitchen.
3. Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
I have three favorites chefs: Enrique Olvera, Jamie Oliver, and Anthony Bourdain.

My advice is to be humble no matter your situation, keep pursuing your dreams, and learn from your mistakes, but most importantly never give up.
4. What do you typically cook at home for yourself or your family?
I usually cook comfort food for my family.
5. What’s a food trend that you’re loving right now and why?
We work with many farmers in the Coachella Valley who directly supply us with fresh, amazing produce. Food trends I like now highlight nutritious balanced meals using fresh, healthy ingredients.

6. What’s the strangest food combination you’ve ever tried? And, did you like it?
Pairing fine dining food with beer. I loved it.
7. Have you ever cooked for a celebrity? Do you have a story to tell?
I have cooked for celebrity chefs, singers such as Jordan Sparks and Shania twain, and celebrity chef Brian Malarkey. It was an honor and a remarkable experience.

I enjoy natural handcrafted cocktails, for example a blackberry mule.
