Where did you grow up, and where have you traveled to that has helped inspire and shape your cooking philosophy? 

I grew up in Upper Manhattan in a neighborhood that sits above Washington Heights, right before crossing over into the Bronx. Growing up in this area, I was surrounded by a melting pot of Latin cultures which heavily influenced my passion and set my foundational love of flavor.

When I decided to turn my passion into a career, I knew I needed to seek out the influence of traditional, creative, and innovative cuisines. I have traveled to France, Italy, Greece, and Spain to seek this exposure. Each one of these countries and experiences have helped to shape my cooking philosophy.

Tell our readers an interesting fact or two about yourself that reflects your cooking style?

Training in more than five different ethnic cuisines and being part of multiple Michelin-star operations, my approach to cooking and my menus reflects the knowledge and experience that has been passed on to me by the previous chefs I have worked under.

Tell us about your absolute favorite food and why readers should try it if they haven’t already.

One of my favorite foods is Japanese A5 Wagyu. The concentrated beef flavor is unlike any type of cattle. It’s buttery, succulent and healthy; rich in vitamin B12, Iron, and monosaturated polyunsaturated fats.

What are three ingredients that you simply couldn’t live without? 

Olive Oil, garlic, and avocado.

We love the art behind plating. What do you love about designing the perfect dish?

After my wife and cooking, art is one of my deepest passions, so I take pride and enjoy the artistry side of cooking. Many factors go into creating the plating of a dish. At the top of the list, I consider texture, colors, seasonality, and of course which combination of flavors best complement each other.

Tell us about one of the most creative dishes you’ve cooked up?

We feature a market salad on the menu at Prime which changes seasonally. One of my favorites has been the Gascon Salad with seared duck confit, butternut squash, boiled egg, walnuts, bacon, and apple cider vinaigrette.

What is one of your greatest accomplishments or awards you've earned?

Being invited to participate in The Autism Speak Gala has been a great honor. It’s a non-profit charity event held at Cipriani’s each year. This cause is near and dear to my heart and allows me to support a fantastic charity using my passion for cooking.

What are some of the latest trends you’re seeing in top restaurants across the globe?

Over the past few years, I have seen the popularity of caviar rise. It was once viewed as a delicacy that was only reserved for the ultra-wealthy. Now through the introduction of new types of caviar we are seeing chefs use this ingredient as a compliment to many dishes. We currently have caviar as an ingredient in three different dishes at Prime.

What’s your favorite cocktail or beverage of choice?

Negroni.
