MEET THE CHEF: Clement Loubeyre of Benoit by Alain Ducasse in Midtown Manhattan, New York

We sat down with Pastry Chef Clement Loubeyre of Benoit by Alain Ducasse in Midtown Manhattan, New York. Benoit NYC is a contemporary French bistro by Alain Ducasse. Clement loves classic French desserts, but above all revisiting them with new techniques or additional flavors. One of his favorite desserts at Benoit since his arrival is the chocolate soufflé, as comforting as it is mouthwatering.

In August 2016, Alain Ducasse transformed the original Benoit into a more modern 21st century dining destination. While the updated look still retains traditional French bistro elements, such as the signature red velvet banquettes, the lighter color palette and brand new Wine Bar bring a breath of fresh air to the heart of Midtown Manhattan.

1. Tell us about what your morning routine looks like, and how you like to end your day?

Every day must start with a good cup of coffee, espresso, and nothing else, and end with a friendly moment with my roommates and very often a meal delivery.

2. Do you have any awards or achievements you’d like to mention?

When we won our first Michelin star at my previous job at Le Faham restaurant.

 

3. Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?

My mentor and chef whom I admire most is Christophe Boucher, who is both a cook and a pastry chef, and who was awarded the title of best pastry chef by Gault et Millau.

As far as advice is concerned, I would recommend these three values to anyone who wants to succeed in this profession: boldness, tenacity and kindness.

4. What do you typically cook at home? 

Cooking is a passion that's all about sharing, so I don't cook for myself, just for others. For my roommates, I like to prepare traditional French dishes (boeuf bourguignon etc.), while for my family, I like to explore and introduce them to unknown cuisines.

5. What’s a food trend that you’re loving right now and why?

I really like what Eleven Madison Park has done by creating vegan pastries, it has clearly been a success.

6. What’s the strangest food combination you’ve ever tried? And, did you like it?

So, there were several, but I'll stick with the celery, violet mustard, and clementine combination. Surprising, isn't it? But it was very good.

7. Have you ever cooked for a celebrity? Do you have a story to tell?

Yes, Serena Williams, Lambert Wilson, Taylor Lautner, and some ministers...

9. What cocktail or beverage do you enjoy most?

I like gin and tonic like a lot of people, but I'm more interested in wines, especially from the Vallee du Rhône.

10. Tell our readers why they should visit Benoit by Alain Ducasse?

For traditional French cuisine with a creative twist. I particularly recommend the pate en croute, cassoulet and a good fruit tart to finish on a high note.
