Tell us about what your morning routine looks like, and how you like to end your day?

I’m usually up around 8 a.m. First thing: take my dog for a good walk on the BeltLine—it’s the best way to clear my head. Then it’s breakfast, a quick shower, and I’m out the door to the restaurant. At the end of the day I keep it simple—grab something easy to eat, shower off to the kitchen, kick back with the remote, and just unwind watching whatever looks good on TV.

Do you have any awards or achievements you’ve earned?

I don’t have a shelf full of culinary trophies—yet. What I do have are two Navy Achievement Medals with Combat “V” for valor from my time in the service. That experience taught me discipline, teamwork under pressure, and how to stay calm when everything’s on fire—skills that translate directly to running a busy kitchen.

Do you have a favorite chef? What advice would you give to aspiring chefs?

I have a few favorites depending on the cuisine, but if I had to pick the ones who blew my mind the most, it’s Ferran and Albert Adrià. Their creativity and technical precision changed the game.

Advice to young cooks: Stay humble. No matter how good you think you are, you don’t know it all—especially in this industry. Keep learning, keep tasting, keep listening.

What do you typically cook at home?

Honestly? My diet at home is terrible (chef’s curse). Most nights it’s something fast and easy just to get food in me. But on my day off actually enjoy cooking—those are the nights I’ll fire up the stove and make something proper.

What’s a food trend that you’re loving right now?

Nostalgia with a twist. I love digging up the flavors I grew up with—things my mom or grandma made—and giving them a modern, elevated spin. Taking those childhood comfort foods and refining them is super satisfying.

Red Bull. Keeps me moving through double shifts and late-night closes. Caffeine is my co-pilot.

Yeah, I’ve cooked for a handful of celebrities who’ve come through the restaurant. Nothing wild or scandalous happened—mostly they just wanted good food and to be left alone, which I totally respect. Happy to feed anyone who loves tapas!
