Tell us about what your morning routine looks like, and how you like to end your day?

I start my day with 30 minutes on my Peloton, followed by stretching and strength training. I recently earned my master’s degree in Studio Art and work primarily in oil painting. The paintings on the walls of my restaurant are my own. I began painting as a way to unwind after long, stressful days in the kitchen. Painting is very similar to cooking—you must balance color, texture, and composition, and it’s easy to overwork a painting just like a dish. Both require technique, patience, and restraint.

Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?

Marco Pierre White. He set the bar high for standards and discipline, emphasizing simplicity over complexity while demanding excellence. Leave your ego at the door. Learn from experienced chefs, and allow the front-of-house team to critique your food—they are your sales force.

What do you typically cook at home? 

At home, I usually enjoy cooking pasta.

What’s a food trend that you’re loving right now and why?

Japanese Snow-Aged Wagyu.

What’s the strangest food combination you’ve ever tried? And, did you like it?

One of the combinations I’m most proud of is our Lobster Wellington, served with fresh tarragon cream sauce and crab meat. It’s outstanding.
