Marcello’s Italian Eatery: Meet the Chef
We sat down with Executive Chef/Owner Nick Devellis of Marcello’s Italian Eatery in Monroe, Connecticut. Marcello’s is a contemporary, upscale Italian restaurant born from a lifetime in the hospitality industry. Tell us about what your morning routine looks like, and how you like to end your day?
Every morning, I begin my day at the restaurant by meticulously setting up all the equipment. This preparation is crucial to ensure that everything runs smoothly throughout the day. I start with the essential prep work, which includes freshly cutting vegetables and organizing all the ingredients needed for our dishes. Following this, I turn my attention to the dining room and bar area, ensuring that every place setting is immaculate. From aligning the silverware to adjusting the candles, every detail is crucial to create the perfect ambiance for our guests.
Do you have any awards or achievements you’d like to mention?
While I may not have any formal awards or accolades at the moment, my passion and dedication to my craft drive me forward. I believe that the recognition will come in due time as I continue to pour my heart into my culinary creations and the customer experience.
Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
I am incredibly inspired by two renowned chefs: Giada De Laurentiis and Todd English. Giada’s approach to Italian cuisine resonates deeply with me, and I was so captivated by her work that I chose to celebrate my 21st birthday at her restaurant in Las Vegas.

For aspiring chefs, my advice is to maintain an open mind and embrace creativity. Do not fear the unknown; the culinary world is vast, and the possibilities are endless.
What do you typically cook at home?
At home, I often find myself cooking pasta and chicken dishes. One of my absolute favorites is Rigatoni Alla Vodka—there’s something special about pasta in vodka sauce, especially with perfectly simmered pancetta and onions. My family also adores my chicken Valdostano whish is stuffed with fontina, prosciutto, and spinach and finished with a brandy peppercorn sauce. This dish always leaves them asking for more, with no leftovers in sight!
What’s a food trend that you’re loving right now and why?
I’m currently enamored with the cheese wheel pasta trend. It's thrilling to hear people talk about it everywhere I go. When I mention that I own Marcello's, the response is always, "Oh, the place with the cheese wheel?" It’s become quite the signature dish and a conversation starter.

What’s the strangest food combination you’ve ever tried? And, did you like it?
One of the most unusual yet delightful culinary experiments I've tried is chocolate fettuccine in a creamy Madeira sauce. Initially, it seemed like an unlikely combination, but it turned out to be one of the most exquisite dishes I've ever tasted.
What drink do you enjoy most?
Espresso Martinis are my go-to cocktail, especially when made with fresh espresso. The life of a chef and restaurant owner involves long, demanding hours, and this delicious drink is the perfect pick-me-up to keep me energized.
