My mornings usually start early with a strong espresso and a quick check-in on the day ahead—menus, prep lists, and making sure everything is aligned for service or events. I like to end my day a little slower, reflecting on what went well, spending time with family, and planning how to make tomorrow even better.
Do you have any awards or achievements you’d like to mention?
Being recognized by the community as a favorite local chef has been incredibly meaningful. But honestly, my greatest achievement is building a business rooted in passion, consistency, and trust—where guests return not just for the food, but for the experience.
Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
I admire chefs who respect tradition while still pushing boundaries. My advice to aspiring chefs: stay humble, stay curious, and never rush the process. Learn the fundamentals, respect the ingredients, and cook from the heart—people can taste the difference, and to NEVER stop dreaming.

What do you typically cook at home?
Simple, comforting Italian food—fresh pasta, grilled vegetables, a good piece of meat or fish. At home, it’s all about flavor, family, and simplicity.
What’s a food trend that you’re loving right now and why?
A return to handmade, honest food—less processed, more intentional. Guests are craving authenticity, and I love seeing traditional techniques appreciated again.

What’s the strangest food combination you’ve ever tried? And, did you like it?
I’ve tried a few unusual pairings over the years, but I’m a traditionalist at heart. If it makes sense and respects the ingredients, I’ll try it—but some classics don’t need reinventing.
What drink do you enjoy most?
A great glass of red wine—a good, aged scotch, bourbon or an espresso, depending on the hour.

I’ve had the pleasure of cooking for many special guests over the years, but I treat everyone the same—celebrity or not. Every plate that leaves my kitchen gets the same care and respect.
