We sat down with Executive Chef Ramiz Jasic of Sea Glass at Inn by the Sea in Cape Elizabeth, Maine. Born in Tuzla, Bosnia and raised in Connecticut, Chef Jasic carries deep inspiration from his roots and childhood moments in his mother's kitchen—most notably her cherished savory pastry, burek. He believes that “food should always tell a story,” and composes dishes that fuse tradition and innovation with a strong commitment to local ingredients.

Tell us about what your morning routine looks like, and how you like to end your day?

My morning and evening routines are largely the same. They’re centered on the team, making sure the kitchen staff starts the day strong and, later, thanking them for a constructive day. It begins with handshakes, greetings and checking in on what everyone needs for a productive day before diving into emails and daily tasks.

Do you have any awards or achievements you’d like to mention?

Sea Glass Restaurant has received Wine Spectator’s second tier recognition, their “Best of Award of Excellence” for our deep wine cellar of over 350 selections that complement our seasonal menus.

Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?

My favorite chef is Marco Pierre White who has been at the forefront of modern culinary evolution for decades. He excelled as a high-end chef, mentored celebrity chefs, owned restaurants and franchises, and was one of the voices that helped elevate our craft.

Aspiring chefs should soak up as much knowledge as possible in every kitchen they work in, including learning from coworkers who can often share valuable insights into food traditions from other cultures around the world. Stay curious and embrace new ingredients. Appreciate the chefs who came before and made it possible for us to follow our passion.

What do you typically cook at home? 

Keeping it simple at home to unwind - fresh Maine seafood and pasta never disappoint.

What’s a food trend that you’re loving right now and why?

Vegan cuisine is a true passion of mine, and we always include several plant-based options on our seasonal menus. These dishes are becoming more popular with everyone, not just vegans.

What’s the strangest food combination you’ve ever tried? And, did you like it?

When I was a kid starting out, the executive chef challenged me to make something great from leftovers. I was sure my cabbage and chocolate recipe would be amazing. It turned out to be the worst thing I’ve ever made, and I still remember it clearly.

What drink do you enjoy most?

Coffee. To me, coffee is about connection and taking the time to sit, interact, and unwind. It’s a moment to relax, reflect, or share conversation with a colleague, friend or family. It’s less about the drink itself and more about shared connections and how it brings people together.

Have you ever cooked for a celebrity? Do you have a story to tell?

Yes! I had the privilege of cooking for my mother’s favorite chef, Jacques Pépin, while I was at the Omni on Amelia Island. I was able to tell him how much my mom admired him, and he was truly touched. After dinner, he came into the kitchen to thank the team and personally thanked me for sharing her story. He also made time for photos with everyone. I immediately sent mine to my mom. She framed it and still has it today.

I don’t have a personal Instagram account, but people can follow me on @innbythesea.maine. I really like the human interaction connected to hospitality and prefer walking into the dining room to talk and connect with guests in person.
