We sat down with Executive Chef Christian Gutierrez of Loveria Caffè in Colleyville, Texas. Tell us about what your morning routine looks like, and how you like to end your day?
Waking up early, having a cup of coffee and taking my younger son to school. Then I go to the restaurant, Loveria Caffe checking all the products arriving fresh from our suppliers and I start cooking with my team. l like to finish my day watching sports programs and talking to my oldest son that is in college.
Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
I don’t have a favorite since I really love cuisines from all over the world. But if I have to pick one, I’ll say Massimo Bottura. My only advice will be never giving up on your dreams, always do what your heart feels and work hard with passion.
Do you have any awards or achievements you’d like to mention?
In Cape Cod, Massachusetts as ‘best restaurant’ and at Loveria—same as customers choice, and other local magazines and organizations here in Colleyville, Texas.
What do you typically cook at home?
Many of the childhood dishes that my grandma and mom used to cook for me from my hometown, “La Mixtequilla,” in Veracruz, Mexico.
What’s a food trend that you’re loving right now and why?
I’m more about traditional food and fusion with new techniques, and this is the new era. I really think that selecting high quality and organic ingredients is a real trend.
What drink do you enjoy most?
A nice cold beer, and “scotch jejeje.”
Have you ever cooked for a celebrity? Do you have a story to tell?
Once my team and I made lunch for the Patriots and dinner for the Red Sox. I also cooked for “Logan Verret” (former Texas Rangers player) and his family. The most exciting event has probably been when I cooked for the presentation of the Ferrari “Purosangue” here in Dallas and the grand opening of the new “Pagani” car dealership, since it was all finger food made from scratch for hundreds of collectors.
What’s the strangest food combination you’ve ever tried? And, did you like it?
Pizza with al pastor meat and peanut butter and burger. Not really, but really “different” combination of flavors.
