Tell us about what your morning routine looks like, and how you like to end your day?

My morning starts with a Lungo Italian coffee, then I’m off to Ingranum, my other business, or to Fiorentini to review the day’s reservations and ingredient deliveries. I personally check the quality of our produce, seafood, and meats—great dishes start with great ingredients. My days are long, but I always end them by coming home, kissing my son goodnight, and spending time with my family.

Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?

I admire chefs who respect tradition while still evolving—Massimo Bottura is a great example. My advice to aspiring chefs is to master the fundamentals first. Learn patience, discipline, and respect for ingredients. Technique is important, but passion and consistency are what truly build a career.

Do you have any awards or achievements you’d like to mention?

Over the years, I’ve won a few culinary competitions and awards, but what means the most to me is being named a U.S. Ambassador for ALMA, the most prestigious Italian culinary school in the world. This past summer, I was also recognized by the Italian government through “I Am Cucina Italiana,” supporting Italian cuisine’s nomination as a UNESCO Intangible Cultural Heritage. Since opening Fiorentini, we’ve also been honored to be recognized as one of the “Top 30 Best Restaurants” every year—something I’m truly grateful for.

What do you typically cook at home? 

Recently, I don’t cook as much at home, but when I do, I like to prepare something fresh using seasonal ingredients to create a simple, well-balanced dish.

What’s a food trend that you’re loving right now and why?

I don’t really follow food trends. For me, food is culture, and I don’t believe in disrupting culture for the sake of a trend. I focus on honoring tradition, using quality ingredients, and letting authentic flavors speak for themselves.

What drink do you enjoy most?

I love a good glass of red wine.

Have you ever cooked for a celebrity? Do you have a story to tell?

I’ve had the privilege of cooking for many well-known guests, but one story that stands out is when Andrea Bocelli dined with us during a three-day show in New York City. He joined us for dinner all three nights, and on the third evening, he asked me to sit and join him at the table. It was a truly special and humbling moment.

What’s the strangest food combination you’ve ever tried? And, did you like it?

I once tried a very unique combination—peanut butter with cabbage—and I actually really liked it. The creaminess of the peanut butter paired surprisingly well with the crunch and freshness of the cabbage, proving that unexpected contrasts can be beautifully balanced.
