Tell us about what your morning routine looks like, and how you like to end your day?

The day must begin with fresh cup of coffee. I weigh the beans, grind and then brew a delicious cup. The good side of me wants to end the day with a run and the bad side of me wants to end the day with a bourbon on the rocks.

Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?

There are too many amazing chefs out there, but I really pay attention to what’s happening in the Bay Area and Chicago - Chef Paul Kahan from Chicago, for instance, has an outstanding approach to food and vision. My advice is simple: Do not give up. It’s going to be tough, but all of your hard work will pay off. Pay attention and remember.

Do you have any awards or achievements you’d like to mention?

Throughout my career, I have been able to cook in many different states and countries where I’ve participated in very cool and intense events - all positive achievements. I received a Michelin Bib Gourmand during my time in Chicago; we were the only hotel restaurant to receive this award that year.

What do you typically cook at home? 

A slow cooked Bolognese with some fresh pasta. My go-to meal.

What’s a food trend that you’re loving right now and why?

I’ve been cooking this way for a while now, but the whole fermentation trend is huge. Funky and salty is the way to brighten your food.

Dealers choice, I like everything out there.

Have you ever cooked for a celebrity? Do you have a story to tell?

Over the years I have cooked for some interesting clients and celebrities, come visit and I’ll tell you some good stories!

What’s the strangest food combination you’ve ever tried? And, did you like it?

I lived in China Town for some time and every Lunar New Year you see moon cake. One and done for me – it’s made with egg yolks, bean curd, it’s sweet and wrapped in a pie crust. The combination creates a strange flavor profile, but I do appreciate the tradition behind this dish.
