Where did you grow up, and where have you traveled to that has helped inspire and shape your cooking philosophy? 

I grew up in Peru and I have traveled to multiple places since I was a kid, and during my career. I have had the opportunity to visit many countries, and learn about their traditions and techniques. Every culture has taught me many skills and aptitudes which helped me prepare for every new chapter of this amazing career. It has been a pleasure for me to be able to visit incredible countries like Malaysia, Singapore, Spain, Brazil, Bahamas, Aruba, and Venezuela.

Tell our readers an interesting fact or two about yourself.

Even though I have been focusing on Japanese cuisine for my entire career, I have also had the opportunity to learn about other cultures and their traditional dishes. One of my favorites is the Spanish cuisine, which I had the opportunity to learn and enjoy during my stay in Madrid.

Tell us about your absolute favorite food and why readers should try it if they haven’t already.

My favorite food is anything Japanese, the art and preparation delivered by this absolute cuisine developed my skills and passion for a culinary career. I believe that Japanese cuisine makes the perfect combination between traditional and creative.

What are three ingredients that you simply couldn’t live without? 

Dashi, truffle and yuzu soy.

We love the art behind plating. What do you love about designing the perfect dish?

Designing the perfect dish involves creating the perfect balance and reaching a delicate but unique taste, delivering a dish designed with art is not complete without an absolute flavor.

Tell us about one of the most creative dishes you’ve created?

One of my favorite creative dishes is the “Spicy Honey Shrimp.” It is one of our hot Izakayas featuring five pieces of crispy shrimp mixed with a creamy spicy jalapeño aioli, a touch of honey, and some walnuts and almonds on top creating the perfect balance between sweet and spicy. We add some micro cilantro and sesame seeds to create the perfect texture and taste.

Having the opportunity to share my culinary skills in such an amazing place as is the Acqualina Resort in Miami, it’s been very satisfying, to participate and be part of their luxury brand hand in hand with Ke-uH Restaurant.

What are some of the latest trends you’re seeing in top restaurants across the globe?

The latest trends I have seen are restaurants focusing on building customer loyalty and delivering diversity. I have also seen the contactless ordering increasing and growing incredibly due to the pandemic.

What’s your favorite cocktail or beverage of choice?

My go-to cocktail is a negroni, a popular Italian drink made with gin, vermouth and Campari.
