Tell us about what your morning routine looks like, and how you like to end your day?
The morning starts at home with coffee beans from a local roaster to jump start the day. After arriving at the restaurant it's time set up the line and get the prep organized so the crew is set for an efficient and successful day. The day ends with relaxing with music or catching up with a series or movie.
Do you have any awards or achievements you’d like to mention?
In fall of 2023 Illinois Foodies named us “Best Barbecue in Illinois” which was a great honor for myself, the team, and the restaurant.
Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
I worked for Doug Dsaltis when he was the regional chef for a restaurant group in Chicago. His accomplishments speak volumes including the New York Times awarding him with the 14th Best Steakhouse in the World.
What do you typically cook at home for yourself or your family?
Pasta and the incredible amounts of sauces that accompany them. From a Bolognese to a wild board ragu it's great and challenging to mix it up to perfect the perfect dish.
What’s a food trend that you’re loving right now and why?
The quality of the food and the people it takes to make a dish special is a trend that will never go away. From the highest levels of fine dining to casual sit downs to the bar that has the best pizza in town places have really stepped up their game and give the customer many more options to enjoy dining out.
What cocktail or beverage do you enjoy most?
I'm simple and enjoy a pour of Crown Royal with a Coke chaser.
Have you ever cooked for a celebrity? Do you have a story to tell?
Yes, but my job was to cook and you can't abandon your post to gawk respectfully.
