Tell us about what your morning routine looks like, and how you like to end your day?
Mornings start with strong coffee, a quick scan of the day’s prep list, and a walk-through of the kitchen to see what’s inspiring me that day. I like to end my nights the same way I cook—simple and satisfying. A good meal, a cold drink, and decompressing after service with the team. If the kitchen had a heartbeat, that’s when you hear it slow down.
Do you have any awards or achievements you’d like to mention?
I’m proud of building kitchens that people want to come back to—not just guests, but cooks. Creating a restaurant that earns loyalty, respect, and repeat visits means more to me than trophies. Consistency is the real award.
Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
Anyone who cooks with honesty gets my respect. My advice: learn the rules before you break them, stay curious, and don’t chase trends—chase flavor.
And most importantly, cook like you care. People can taste the difference.
What do you typically cook at home?
At home, it’s comfort food with a twist—tacos, pastas, roasted meats, whatever feels right after a long shift. Simple ingredients, bold seasoning, no fuss. Home cooking should feel like a deep breath.
What’s a food trend that you’re loving right now and why?
Bringing things back to basics. Seasonal ingredients, real technique, and plates that don’t try too hard. When food is thoughtful instead of flashy, it always wins.
What’s the strangest food combination you’ve ever tried? And, did you like it?
Sweet and savory always surprises people—things that shouldn’t work but absolutely do. If it makes you pause before taking a bite, I’m probably interested. And yes… I liked it.
What drink do you enjoy most?
A well-made cocktail or a solid glass of wine—nothing complicated, just done right. Same philosophy as the food.

I’ve cooked for a few recognizable faces, but honestly, every guest gets the same treatment. Whether you’re famous or it’s your first night out in months, the plate doesn’t change.
