Where did you grow up, and where have you traveled to that has helped inspire and shape your cooking philosophy? 

I grew up in the Bahamas, which provided me with a unique culinary foundation. While I haven't had the opportunity to travel extensively, my experience in the industry has allowed me to collaborate with both local and international chefs. I've been fortunate to tap into their culinary expertise, expanding my knowledge and skills.

Tell our readers an interesting fact or two about yourself that reflects your cooking style?

Humility is a trait I hold dear. I vividly recall a humbling experience from my apprentice days when I entered a cooking competition at a resort. I was overconfident and ended up not only being beaten but finishing last. This memory serves as a constant reminder to remain humble and open to learning from fellow chefs, cooks, and anyone willing to share their knowledge.

Tell us about your absolute favorite food and why readers should try it if they haven’t already.

I have a deep appreciation for a well-made tomato bruschetta. The dish's freshness and the delightful touch of a balsamic reduction elevate it to culinary excellence.

What are three ingredients that you simply couldn’t live without? 

My secret ingredients are garlic, sea salt, and, of course, BUTTER! (with a wink)

We love the art behind plating. What do you love about designing the perfect dish?

I firmly believe that chefs are akin to artists. Each plate we create is a canvas, and our dishes are expressions of our passion. Personally, I find beauty in simplicity, aiming for clean and aesthetically pleasing presentations that reflect the love I pour into my creations.

Tell us about one of the most creative dishes you’ve cooked up?

One of my most imaginative creations dates back to my high school days when I crafted a coconut rice soufflé with curried conch-stuffed crepes.

What is one of your greatest accomplishments or awards you've earned?

Opening my second restaurant, Oasis Bar and Bistro, stands as one of my most significant accomplishments to date.

What are some of the latest trends you’re seeing in top restaurants across the globe?

Social media has profoundly impacted the restaurant industry, bringing both benefits and challenges. On the positive side, it has given small restaurants a platform to shine. However, it also means everyone becomes a critic, which can stifle creativity in chefs due to the fear of backlash.

What’s your favorite cocktail or beverage of choice?

When I need a go-to drink, you'll often find me sipping on a delightful combination of pineapple juice and coconut rum. It's sweet and very Caribbean in flavor.

What truly excites me is the creative process of designing my dishes and witnessing the joy they bring to both my team and customers in my restaurant.
