Tell us about what your morning routine looks like, and how you like to end your day? 

After dropping my kids off at school I head downtown. I stop at my favorite local coffee shop for a strong coffee drink. I get to Roosters and check on everything. Usually my wife has already been there making hand pressed corn tortillas, and baking our desserts. I check in with my kitchen manager and my GM about the day.

We talk about upcoming events, specials, staff and guest issues… etc. I usually go to my office a few blocks from Roosters and complete admin work. Then I’m back to Roosters for the lunch rush. I like to end my day by having dinner and quality time with my family.

Do you have any awards or achievements you’d like to mention?

We won “Best New Casual Restaurant” our first year open in 2017, and have since won several different “Best of Mobile” awards each year since. We were also featured on the Food Network’s Diners, Drive-Ins and Dives in November 2023. Each time we get a new 5-star review from guest I consider that a great award!

Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?

Like most chefs, I would say I have the fondest memories of my Grandmother’s cooking. I grew up on a farm with my grandparents, and the simple, fresh way of eating we did is unmatched by any restaurant I could think of. I am also a big fan of Anthony Bourdain, mainly for his way of expressing his views of travel, food, and the world around him so eloquently. The advice I would give any aspiring chefs would be to not let your own ego get in the way of being successful in this business. Learn the basics, learn to only be concerned with working hard, and being a reliable stable person. Keep your cooking simple and fresh, don’t over complicate it.

What do you typically cook at home for yourself or your family? 

I get bored with one type of food, so on any given week I might cook Tacos, Asian-style lettuce wraps, smash burgers, something Italian, Southern food… I love cooking a good t-bone or rib eye steak basted with garlic rosemary butter.

What’s a food trend that you’re loving right now and why? 

Chili crisp! A well made chili crisp brings delight to almost any savory food.

 

What’s that strangest food combination you’ve ever tried? And, did you like it?

When I was a kid my mom made me peanut butter and mayonnaise sandwiches. It sounds really weird to me now but I loved them as a kid.

What cocktail or beverage do you enjoy most?

Strong coffee in the morning… Full bodied red wine at night.

Have you ever cooked for a celebrity? Do you have a story to tell?

There are several live music and theater venues near Roosters, so we have served all kinds famous groups. No crazy stories to tell though!
