Tell us about what your morning routine looks like, and how you like to end your day?
Every morning, I start my day at the local village market, handpicking the freshest produce, fish, meat, and poultry. It’s essential for me to personally select these ingredients to ensure the highest quality. Afterward, I focus on the base preparations for sauces, meet with my chefs to discuss the day’s priorities, and plan the menu.
My afternoons are spent finalizing dining setups and preparing for evening service, including planning event menus. It’s a balance of meticulous preparation and creative collaboration.
Do you have any awards or achievements you’d like to mention?
I’m honored to have contributed to Tanjore being recognized as one of the Top 50 Restaurants in Palm Beach County. I’ve also received recognition from La Chaîne des Rôtisseurs – Association Mondiale de la Gastronomie for excellence in Indian cuisine. Additionally, I’m proud of the restaurant’s achievements, earning the Wine Spectator Award of Excellence in 2022, 2023, and 2024.
Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
Chef Peter Beck has been a tremendous mentor to me. I deeply admire his leadership style and the way he inspires through his actions. My advice to aspiring chefs would be to lead by example. Stay committed to your craft, constantly learn, and never hesitate to explore new flavors and techniques.
What do you typically cook at home for yourself or your family?
At home, I lean toward seafood dishes, blending French culinary techniques with an Indian twist. It’s all about creating comfort food with layers of flavor and a touch of elegance.
What’s a food trend that you’re loving right now and why?
I’m loving the small plates and tapas-style trend. It’s a great way to explore diverse flavors in one sitting. I particularly enjoy creating light dishes with Indian-inspired influences, blending them with French and Italian culinary traditions. It’s an exciting fusion that brings a fresh perspective to the table.
What’s that strangest food combination you’ve ever tried? And, did you like it?
I once experienced an Afrikaans-Indian fusion dinner that left a lasting impression. It featured an array of meats prepared with bold, spicy barbecue flavors inspired by Afrikaans cuisine. The result was an extraordinary mix of tastes that I absolutely loved—it was one of the most amazing culinary experiences I’ve ever had.
What cocktail or beverage do you enjoy most?
My go-to drink is an Old Fashioned made with Booker’s bourbon. At Deccan, we give the classic Old Fashioned a unique twist by infusing it with old Tawny Port wine and smoking it with applewood. It’s a delightful balance of tradition and innovation.
Have you ever cooked for a celebrity? Do you have a story to tell?
During my tenure at Tamarind Tribeca, I had the honor of cooking for many celebrities. One memorable experience was preparing a multi-course Indian culinary journey for Mike Tyson. It was intense yet incredibly rewarding. Jimmy Fallon was also a regular guest, and every visit was filled with laughter and great food. These moments remind me of the joy food brings to everyone.
