Tell us about what your morning routine looks like, and how you like to end your day? 

I begin each day cooking for my clients, and my love for cooking is at the heart of everything I do.

It’s my dream to pass down my recipes and ensure that my son and grandchildren continue to carry on this legacy.

Do you have any awards or achievements you’d like to mention?

My greatest achievement is having arrived in this country with empty hands but with a great desire to have a restaurant and thanks to God I have achieved it. I have been cooking since I was14 and at that age I started to sell food on the streets of Oaxaca.

Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?

My favorite chefs are Karlo Pacheco and Alejandro Ruiz. My advice to aspiring chefs is to cook with your heart, because the flavors come from the soul.

What do you typically cook at home for yourself or your family? 

I cook Oaxacan food and my favorite food is memelas with salsa and cheese, albondigas, and chile relleno.

What’s a food trend that you’re loving right now and why? 

Oaxacan moles will always be my favorite culinary tradition. I want Oaxacan food to be recognized bya larger part of the world, especially with the help of today’s technology.

 

What’s that strangest food combination you’ve ever tried? And, did you like it?

The combination of armadillo in mole was delicious, and the use of grasshoppers in various dishes is always a favorite.

What cocktail or beverage do you enjoy most?

My favorite drink is the Mexican ponche, prepared with a variety of fruits, as well as guava and corn atoles.
