Tell us about what your morning routine looks like, and how you like to end your day?
As a business owner and head of the kitchen, every day is different. One thing I never skip isa good cup of coffee to start the day. My mornings are often spent running errands, grabbing fresh ingredients, or heading to the restaurant early to get a jump on prep work.
At the end of the day, things slow down, and I get to relax a bit. I usually sit at the bar, enjoy a drink or two, and chat with my crew about how the day went and what we need to do for a successful tomorrow.
Do you have any awards or achievements you’d like to mention?
We’re proud to have been recognized by Best of Hudson Valley as the "Best Taco Shack" in the Hudson Valley. In addition to a couple of other mentions over the years, we were most recently awarded for having the "Best Nachos" in the Hudson Valley. These honors reflect our commitment to delivering fresh, flavorful dishes that keep our guests coming back for more.Personally, one of my proudest achievements has been the loyal following we’ve built through our dedication to quality and creativity in the kitchen. “This is the best meal I’ve ever had!” feels like the highest honor.
Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
One of my favorite chefs is Emeril Lagasse. His recipes are simple yet packed with flavor, which is something I really admire. An old boss of mine, who was a great chef, once told me, “You have to make something great out of simple ingredients,” and that advice has stuck with me. For aspiring chefs, my advice is to truly love cooking. It has to be a passion, not just a paycheck. The rewards will come, but only after you’ve put in the hard work and dedication to mastering your craft.
What do you typically cook at home for yourself or your family?
My favorite thing to cook at home is Italian food. I learned to make an incredible marinara sauce early in my career from the owner/chef at Dillinger's, and that love for Italian flavors has stuck with me. Beyond that, I enjoy cooking just about anything—from a flavorful carne asada to a fancy dinner. Whenever friends or family ask me to make something, my response is always,“Bring me all the ingredients, and I’ll gladly make it for you.” I even say the same to my kids when they request their favorites!
What’s a food trend that you’re loving right now and why?
I love seeing Mexican ingredients in trend and getting the recognition they deserve. When Istarted in this business 17 years ago, many people didn’t know about ingredients like tomatillos ,chipotle peppers, or guajillo peppers—just to name a few. Customers would even ask me how to cut a mango or ripen their avocados! Over the years, I’ve also noticed people becoming more adventurous with spice levels. Here at Super Nacho, my wife makes an amazing fiery roasted jalapeño hot sauce that has quickly become a customer favorite—it’s great to see how much people appreciate bold, authentic flavors now.
What’s that strangest food combination you’ve ever tried? And, did you like it?
I remember as a kid, my mother would make cheese-stuffed jalapeños in a sweet tomato sauce. I really disliked that combination back then—I couldn’t understand why my father loved them so much! Over time, though, I’ve come to enjoy flavors with that taste profile because they take me back to my mother’s cooking. It’s funny how your palate can change and how food can carry so much nostalgia.
What cocktail or beverage do you enjoy most?
I’m a fan of a delicious hazy IPA—there are some great breweries around here that make some fantastic brews. Lately, though, my go-to drink is mezcal with soda water and a hint of lime. I’ve always liked my spirits with soda water because it allows me to truly enjoy the flavor that was intended in each spirit.
Have you ever cooked for a celebrity? Do you have a story to tell?
Yes! Back when Super Nacho was at our old location with an open kitchen, I had the chance to cook for a film crew for about a week. One day, I struck up a conversation with a friendly guy from the crew, not realizing it was Jay Hernandez! It wasn’t until a few days later that someone clued me in on who I’d been chatting with.
