Tell us about what your morning routine looks like, and how you like to end your day?
Mornings start early for me. I believe in beginning the day with focus, so I take some time for a quiet moment with coffee before heading to the restaurant. Once I’m at NORI, I review the prep work, check our ingredient quality, and discuss the day’s specials with the team.
My day ends with reflection—I go over customer feedback, look at ways we can improve, and, of course, enjoy a good meal before heading home.
Do you have any awards or achievements you’d like to mention?
I’ve had the honor of working in some of the top kitchens across the country and have been recognised for my fusion-style approach to ramen and sushi. NORI has also been featured in multiple food publications as a must-visit spot in Alabama and also awarded one among the best caterers. Our customers calling us the “Best Ramen in Alabama” is the biggest achievement of all.
Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
I look up to Chef Anthony Bourdain for his mastery of both tradition and innovation. His ability to balance authenticity with creativity is something I strive for. My advice to aspiring chefs is simple: never stop learning. Respect the fundamentals, but don’t be afraid to experiment and develop your own style.
What do you typically cook at home for yourself or your family?
At home, I keep it simple—comforting dishes like miso soup, grilled fish, and rice. But if I have time, I love making homemade ramen, experimenting with new broths and toppings that might make their way onto NORI’s menu.
What’s a food trend that you’re loving right now and why?
I’m loving the rise of bold umami flavors in unexpected places, especially fermented ingredients being used in modern cuisine. Things like miso butter, black garlic aioli, and aged soy sauces add deep complexity to dishes, and people are starting to appreciate them more.
What’s the strangest food combination you’ve ever tried? And, did you like it?
I once tried sushi topped with peanut butter and jalapeño. It sounded strange, but the mix of creamy, spicy, and umami actually worked surprisingly well! Would I serve it at NORI? Maybe with a little refinement!
What cocktail or beverage do you enjoy most?
I enjoy my Crown Royal on the rock and cucumber margarita. Simple, refreshing, and pairs well with both sushi and ramen.
Have you ever cooked for a celebrity? Do you have a story to tell?
Not lucky yet but I treat my customer feel like celebrity all the time.
