Tell us about what your morning routine looks like, and how you like to end your day? 

Really depends on the day. If I'm working, it's a quick shower and a light breakfast and then onto work. Days off are for sleeping in and getting outside with my girlfriend. Chefs spend almost all their time indoors under recessed lighting. Any chance for fresh air and to stretch the legs we spend 60+ hours a week on is welcome.

Do you have any awards or achievements you’d like to mention?

None yet, personally (thanks for my first recognition). Paper Tiger is listed as one of the top 75 places to dine in the greater Portland area. Which in this economy and competitive market is impressive.

Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?

Anthony Bourdain. His take on culinary life most don't understand. But his ethos of living freely and being open to new things inspires me daily. To live well and to try everything once. Deep down all chefs strive to be authentic and it feels as though Bourdain embraced what many view as a risky unhealthy lifestyle. But for those that embrace our craft and what goes along with it, there can be wisdom and happiness. But only if you work hard to find it. He taught us all so many life lessons in an uncommon way. You can't be a great chef if you can't be a good teacher and person first.

Also, Vladamir Mukin of the White Rabbit in Russia. Inspiring recreation of the food of his homeland. Taking traditional recipes from his country and family and curating that into a michelin star experience. Every chef I think in some way wants to reflect their roots and where they came from. To be invested in their past while also shaping a new future. Feels as close to magic as we get.

What do you typically cook at home for yourself or your family? 

Takeout or anything that can be cooked in one pot so I don't have to do a bunch of dishes. I'd love to say that cooking at home happens every night. It doesn't. After a long day, I'm happy to let another chef nourish me.

What’s a food trend that you’re loving right now and why? 

A trend that I enjoy right now as a younger generation of chefs emerge there is more emphasis on collaboration and crowdsourcing. It's less now about who's better but how we can all lift each other up. New technique? Post it. Found a flavor combination that is new and wild? Share it. Making this industry more accessible and collaborative will yield better food, working conditions and the idea that anyone can learn to cook if given the opportunity. Also that the rule book has been thrown out. Not that nothing is sacred. You can do whatever you want as long as it tastes good. Food should be a melting pot of culture and creativity. Do what you want. Be inspired. Take chances. No rules. Just fun.

What’s the strangest food combination you’ve ever tried? And, did you like it?

A friend in college in what we will describe as a late night gave me spaghetti, dried parmesan cheese, and soy sauce. Was I extremely skeptical? Yes. Did I eat the whole thing? Also, yes.

What cocktail or beverage do you enjoy most?

Favorite cocktail is either a Paper Plane or a Hemingway Daiquiri. Almost any flavor of Polar seltzer. Same feeling as soda but without the fake sugar.

Have you ever cooked for a celebrity? Do you have a story to tell?

Cooked for the Bush family whilst early in my career in Kennebunkport. Politician is almost a dirty word these days. But the family was kind and generous with the staff. I wish our elected officials had those sort of manners and respect for hardworking Americans these days.

Anyone visiting Maine should come to Paper Tiger because I believe that there are very few establishments that can offer the quality of both food and beverage that we can. The best cocktails in the city by far is seemingly what we are truly known for. However, I am proud that many guests come for the cocktail program and are surprised by the quality of the culinary program. 

I am proud of my team and the food that we are crafting. In a city that is filled with high quality food and drink, we stand out. We have also created a culture where our guests can have fun. We are a vibe. So if you want high level food and drink in a fun, boisterous atmosphere Paper Tiger is for you.
