We sat down with Executive Chef Jose Dionicio of Ika Ramen & Izakaya in Omaha, Nebraska. Ika Ramen and Izakaya is a vibrant ramen shop and izakaya that is making waves in the Midwest with both innovative and traditional dishes. The atmosphere is electrified by upbeat music and striking graffiti murals that adorn the walls, aiming to create a modern and cozy take on the classic izakayas of Japan.
Tell us about what your morning routine looks like, and how you like to end your day?
I check with my kitchen team to check to see where we stand on prep needs, come up with a plan for the day and visit all the restaurants and create specials. I like to end my day watching South Park with my son and relaxing with my dogs.
Do you have any awards or achievements you’d like to mention?
Named “Best Ramen Restaurant” by the City of Omaha since we started.
Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
I don't have any one particular chef. There are so many people just in Omaha that have pushed through everything - COVID, major repair expenses, empty tables - and became as successful as they are. My advice would be to always keep your eyes on growth and knowledge.
What do you typically cook at home for yourself or your family?
Whatever I can find in the refrigerator and pantry and just create something with that.
What’s a food trend that you’re loving right now and why?
I am loving nouvelle, modern takes on traditional Peruvian cuisine and Japanese sushi because of the creativity that is being brought to them.
What’s the strangest food combination you’ve ever tried? And, did you like it?
I have a friend from Colombia that had me try a traditional drink that was American cheese in hot chocolate. It didn't work.
What cocktail or beverage do you enjoy most?
Fernet and Coke.
Have you ever cooked for a celebrity? Do you have a story to tell?
I didn't cook for her, but Julia Stiles ate in a restaurant I was a sushi chef at in Massachusetts. She joined us at a nearby bar afterwards with the entire staff.

We were the first ramen place in Nebraska and we are the only one in the Tri-State area that makes our own noodles. We are also one of only a few that makes their own broth.
