In the morning, I start with a thorough check-up of the kitchen to ensure everything is in order and ready for the day. Then, I move on to mise en place, which involves preparing all the ingredients and setting up the workstations. Finally, I make sure my cooks are well-prepared and set up for the day ahead.

I like to end my day by reviewing the events of the day, planning for the next, and taking a moment to unwind.

2. Do you have any awards or achievements you’d like to mention?

I don't have any special awards or achievements to mention, but I take great pride in the recognition from our customers. Ophelia is now the number #1 restaurant in Quebec City according to Tripadvisor.

 

3. Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?

I look up to Anthony Bourdain. My advice to aspiring chefs is to get ready to work hard because it’s not an easy job. Every day brings new challenges, and you have to be prepared to face them.

4. What do you typically cook at home? 

At home, I typically cook comfort food. I enjoy making dishes that are simple yet satisfying, the kind of food that brings warmth and happiness.

5. What’s a food trend that you’re loving right now and why?

I don’t really follow food trends. I prefer to cook what I want and love. It’s important to stay true to your own culinary style and passions.

6. What’s the strangest food combination you’ve ever tried? And, did you like it?

I once tried balut in the Philippines, which is a fertilized developing egg that is boiled and eaten from the shell. It was a unique experience, but I didn’t particularly enjoy it.

7. Have you ever cooked for a celebrity? Do you have a story to tell?

Yes, David Savard came to the restaurant after his Stanley Cup win. It was an incredible experience, and I had the unique opportunity to use the Stanley Cup itself as a seafood platter, which was quite a memorable moment.

9. What cocktail or beverage do you enjoy most?

I enjoy red wine and ice-cold beer the most. There’s something incredibly relaxing about ending a long day with a nice drink.
