Tell us about what your morning routine looks like, and how you like to end your day?

My morning routine typically consists of answering emails and prepping one of our four food trucks for the day's events. I will stock up on all ingredients and ensure I have the proper menu set for the day ahead. If I get home in time, I like to end my day, reading books and singing songs to my three-year-old boy.

Do you have any awards or achievements you’d like to mention?

We won the “Best Food Truck” in our area from a local publication.

Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?

Anthony Bourdain was a huge inspiration for driving my wife and me to travel, ultimately leading us to an expedition to Italy that allowed us to discover a concept similar to what we serve today.

We serve pizza cones. Calling myself a chef and giving advice to people who aspire to find success in this field would be an insult to the many talented individuals who have pursued a more advanced career path. From an uneducated culinary perspective, I would say to stick with the shoe slogan and just do it.

What do you typically cook at home? 

We like to try a broad range of global dishes, and preferences can change by the week. I will say, as I have found myself nearing middle age, I have an unquenchable desire to smoke and grill various meats.

What’s a food trend that you’re loving right now and why?

I recently got a Blackstone, and it has become my entire personality. I think people are sick of hearing me bring it up in inorganic conversations, but others who are immersed in the trend can completely empathize.

What’s the strangest food combination you’ve ever tried? And, did you like it?

I once ate a cricket-covered tostada at a well-regarded restaurant in Mexico City. While the flavor was largely pleasant, the dozens of severed legs that found a new home in the crevices between my teeth were not something I would be too keen to replicate.

What drink do you enjoy most?

Whiskey. Neat.

Have you ever cooked for a celebrity? Do you have a story to tell?

One of our food trucks is permanently stationed at a large, local music venue, and we have fed quite a few notable, nationally known acts.
