Tell us about what your morning routine looks like, and how you like to end your day? 

My mornings start early, usually around 6am. The first thing I do is hit the gym for about 1 1 and a half hours. It’s crucial for my 7 days a week work schedule, I had to learn that the hard way. Then Ihead to the market to pick up the fresh ingredients for the day. I believe in using the best produce, especially for our broth and herbs. Once at Viet’sPho, it’s all about prepping and coordinating with my team. It’s a busy but energizing start.

As for ending my day, I enjoy a hearty dinner with my family and a good sleep after a long day, it is the best feeling in the world.

Do you have any awards or achievements you’d like to mention?

We have been one of the best restaurants in Troy for 3 years in a row since 2022.

Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?

I deeply admire Christine Ha. Her story is incredibly inspiring, and her dedication to Vietnamese cuisine in the US is something I strive for. She demonstrates that passion and perseverance can overcome any obstacle ,and her food is just phenomenal. As for advice, I’m still learning myself, but what I’ve found to be most important is to give 120% every single day. That means putting your heart into every dish, always striving for improvement, and never cutting corners. Also, be kind to everyone in the kitchen and beyond. This industry can be demanding, and a positive, supportive environment makes all the difference.

What do you typically cook at home for yourself or your family? 

Vietnamese food.

What’s a food trend that you’re loving right now and why? 

The rise of plant-based and vegetarian/vegan dishes is definitely a trend I’m enjoying. It’s pushed us to be more creative in the kitchen and explore new ways to bring out the delicious flavors of vegetarian and tofu. We’ve been working on expanding our vegetarian options at Viet’s Pho, and it’s been a rewarding experience. It’s exciting to see more people discovering how flavorful and satisfying plant-based Vietnamese food can be.

What’s the strangest food combination you’ve ever tried? And, did you like it?

That’s a fun question! The strangest combination I’ve ever tried has to be pizza with shrimp paste. I know it sounds wild, and I was definitely skeptical at first. Someone dared me to try it, and I’m always up for culinary adventures. Honestly, it wasn’t terrible! The saltiness and umami of the shrimp paste actually complemented the cheese and tomato sauce in a surprising way. It’s definitely not something I’d eat every day, but it was an interesting experience.

What cocktail or beverage do you enjoy most?

Teas and milk teas for life.

Have you ever cooked for a celebrity? Do you have a story to tell?

Well, I haven’t officially cooked in a restaurant setting for a celebrity, but I do have a memorable story. Several years ago, I was a huge Backstreet Boys fan and attended one of their concerts. I was so excited for the meet and greet before the concert that I skipped eating to get there early. I packed a bánh mì (Vietnamese bread) in my bag, and while I was waiting in line to get into the venue, one of the members passed by and saw me eating it. He was curious and asked what it was. I was so thrilled and offered him the other half. He tried and really enjoyed it! It was a surreal moment, and it made me realize how food can connect people, even in the most unexpected situations. While it wasn’t a formal cooking experience, it was definitely a special moment where I shared my passion for Vietnamese cuisine with someone famous.
