Tell us about what your morning routine looks like, and how you like to end your day?
Mornings for me start early and simple. I usually begin with a strong cup of coffee—it’s my fuel for the day. I spend a few moments reflecting on what needs to be done at the restaurant and how I can make the day better for my team and guests. After that, I check in with the kitchen, review inventory, and plan my recipes.
My evenings? They’re about winding down and reflecting. I like to end the day with a quiet moment, whether that’s reading, listening to music, or just sitting outside, appreciating the calm after the whirlwind of a busy day of service.
Do you have any awards or achievements you’d like to mention?
We’ve been honored to be listed as the best old-school Italian restaurant in Mississippi for seven consecutive years by MSN, which is a testament to our commitment to authenticity and quality and last year, we were also incredibly honored to receive the “Best of Coastal Mississippi” award, which is a contest voted on by our beloved local patrons. These recognitions remind me of the deep connection we have with our community and the love that surrounds The Sicilian II every day.
Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
The chef I admire most was and still is my father, Chef Hristo, who passed in 2016 due to pancreatic cancer. He was an immigrant who built his life and career from the ground up with nothing but passion, determination, and an unwavering love for food. He wasn’t just a chef—he was a force of nature in the kitchen, pouring his heart into every dish he made. People loved him not only for his incredible food but for the warmth and joy he brought to every meal. He taught me that cooking is more than just following recipes; it’s about creating connections and making people feel cared for. His passion was infectious, and his commitment to authenticity and hospitality shaped everything I do today. My advice to aspiring chefs: Master the basics, stay humble, and cook with heart. People can taste the love and effort you put into your food- passion and authenticity will always resonate, and if you love what you do, it will show in every bite but also, never stop learning and always be open to feedback—it’s the only way to grow.
What do you typically cook at home for yourself or your family?
When I’m at home, it’s all about comfort food. You’ll find me making simple Italian dishes—maybe a rich Bolognese, a hearty minestrone, or a classic Margherita pizza. I also experiment with gluten-free versions of family favorites to keep pushing my boundaries.
What’s a food trend that you’re loving right now and why?
One trend I’m really passionate about is the growing demand for gluten-free options. Living with celiac disease has driven me to transform as many Italian dishes as possible into flavorful, gluten-free versions. It’s a challenge I embrace wholeheartedly because I believe no one should have to miss out on the joy of a great Italian meal due to dietary restrictions. I’m constantly experimenting and refining recipes to ensure they’re just as delicious and comforting as the originals, while remaining safe for those who need them. It’s incredibly rewarding to see guests light up when they realize they can enjoy dishes they thought were forever off-limits.
What’s that strangest food combination you’ve ever tried? And, did you like it?
One of the oddest combinations I’ve tried was prosciutto-wrapped figs drizzled with balsamic reduction and topped with a sprinkle of dark chocolate. It sounded strange at first, but the balance of salty, sweet, and tangy was absolutely incredible. So yes, I loved it!
What cocktail or beverage do you enjoy most?
I’m a classic kind of guy—I love a well-made Negroni. The balance of bitter, sweet, and citrusy notes feels like the perfect way to unwind after a long day. When I’m not in the mood for a cocktail, a glass of good red wine is my go-to.
Have you ever cooked for a celebrity? Do you have a story to tell?
Yes! We had the privilege of serving the entire cast and crew of the movie Play Dirty while they were filming here in Mississippi. It was such an exciting experience to know Mark Wahlberg, Rosa Salazar, and the rest of the crew enjoyed our dishes. Knowing how much they appreciated our food, even in the midst of a demanding film schedule, was a rewarding moment for our team. Moments like that reaffirm why I do what I do—bringing people together through food, whether they’re Hollywood stars or my Coastal family.
