Tell us about what your morning routine looks like, and how you like to end your day?

Wake up and grab myself a cup of coffee, head to work to pull briskets from the smokers, and meat loaded for service for the day. I Like to end my day at home with my wife, Taylor, and my two kids, Emilia and Jack.

Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?

Roy Choi, from how he got started cooking, to the food truck scene, and everything in between has been a huge inspiration, and what really fueled my passion for culinary arts. Follow your dreams, you are in control of your own destiny. If you do what you love you will never work a day in your life.

What do you typically cook at home? 

Anything I can grill or smoke. Burgers and steak smoked, and then seared in a hot skillet, or a buttermilk banana bread baked in the smoker with pecan wood are top favorites, but also the kids love a good classic mac and cheese!

What’s a food trend that you’re loving right now and why?

Fusion. Being able to cross culinary staples with others, to make something new and exciting. Always has been a big passion of mine!

What’s the strangest food combination you’ve ever tried? And, did you like it?

I wouldn’t say strange, because you never know if it will work until you try it! If I had to choose, I would say using smoked meat in a sushi roll. Made some great rolls, like a smoked brisket mac and cheese roll topped with toasted panko and our wildfire BBQ sauce and a jalapeño popper with smoked puled pork roll topped with our sweet and sticky BBQ sauce, ranch, and scallions!

What cocktail or beverage do you enjoy most?

I will never turn down a zero-sugar wild cherry Pepsi, or a Lipton diet peach tea!

Have you ever cooked for a celebrity? Do you have a story to tell?

During the Iowa State Fair, we have had a few come by our stand, like Megan Maroney and Tim Walz, and Alexandra Daddario visited our restaurant. Also have cooked for our local media celebrities, making the top 10 fair food finalist competition, and placing in the top three for both years we have been at the fair!
