Tell us about what your morning routine looks like, and how you like to end your day?
My morning routine starts first with a black cup of coffee before anything, then I go say hello to the staff, then I check numbers from the night before, then I check my inbox, depending on the day, I either start doing orders or begin prepping the lunch special and staff meal.
Do you have any awards or achievements you’d like to mention?
I do not have any awards that I would like to mention.
Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
Like most chefs my age, Anthony Bourdain will always be a favorite, he got to travel the world, eat amazing food, and meet interesting people. Advice for aspiring chefs, always continue learning, there are so many techniques, recipes and dishes out there that you should never stop discovering new things.
What do you typically cook at home for yourself or your family?
Typically at home, it’s a lot of Mexican, my wife loves tacos, especially Birria. She’s also a big seafood fan, and I try to make her breakfast when I can.
What’s a food trend that you’re loving right now and why?
The trends I love are global flavors. I love that street food is becoming more mainstream and we're getting back to basics and cooking real food again, nostalgic comfort foods.
What’s the strangest food combination you’ve ever tried? And, did you like it?
Strangest food combination I’ve ever tried, it’s probably not strange anymore but at the time, watermelon, feta and sea beans. If you’re a person that likes salt on your watermelon then this salad is for you.
What cocktail or beverage do you enjoy most?
Cocktail or beverage I enjoy most, typically I like a good bourbon, lately I’ve been on a tequila kick, I also like a good martini or Bloody Mary.
Have you ever cooked for a celebrity? Do you have a story to tell?
I’ve cooked for so many celebrities I’ve lost count, not a lot of great stories to it, they’re either really nice or they aren’t.
