Tell us about what your morning routine looks like, and how you like to end your day?
Mornings start early with a strong cup of coffee and getting the kids ready for school. Once I’m at the restaurant, we begin by checking the catering board and calendar, loading the barbecue pits, and mapping out the day’s plan.
Evenings wind down with time at home—usually with a little cooking, time with family, and mentally preparing for the next day.
Do you have any awards or achievements you’d like to mention?
We’ve been honored with multiple “Best of the Press” awards over the years, including Best Restaurant, Best BBQ Ribs, Best Friday Fish Fry, Best Beer Selection, and Best Service. We’ve also been featured on local TV and in several press write-ups. These recognitions mean a lot—they reflect the hard work and dedication of our entire team.
Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
Chef Howie, without question. My business partner, Jeremy, and I both started in this industry under his mentorship. Though he passed years ago, his lessons still guide us every day. To aspiring chefs: keep pushing. This industry isn’t easy—it’s a grind. But if you give it 110%, stay true to your craft, and stay open to learning, the journey is worth it. Learn from others, but make it your own. Every success and failure teaches you something.
What do you typically cook at home?
Barbecue, of course—but I also really enjoy making Asian dishes like ramen, stir fry, fried rice, and banh mi. Smoked meats add incredible depth to those flavors.
What’s a food trend that you’re loving right now and why?
Tacos! Honestly, has anyone ever had a taco they didn’t like?
What’s the strangest food combination you’ve ever tried? And, did you like it?
Bacon in cheesecake. Years ago, one of our chefs came up with the idea, and I was skeptical. But wow—it blew my expectations away. It’s now a staple on our dessert rotation. I make every Maple Bacon Cheesecake from scratch, and it’s become a guest favorite.
What cocktail or beverage do you enjoy most?
Old Fashioneds and hazy IPAs—both bold and packed with flavor.
Have you ever cooked for a celebrity? Do you have a story to tell?
A few! One that stands out is Jim McMahon, former Chicago Bears and Vikings QB. He came in during a busy Saturday dinner rush. My business partner, JT, told me he was sitting at Table 8—and we were star-struck. He and his guests couldn’t have been nicer. He told us other players had recommended Smokey’s while he was in town, which was incredibly humbling.
