Tell us what your morning routine looks like, and how you like to end your day?
We start with prepping the food for the lunch and dinner shift, including cutting the fries and making our scratch made condiments.
On warm days we like to end the day with a drink and discuss the day's business.
Do you have any awards or achievements you’d like to mention?
We have earned the distinction of being a top 3 favorite burgers in Racine County 2024.
Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
I'm not going to lie, as a kid I always looked up to the Swedish chef, he always had the right things to say. As an adult, there have been so many great chefs to admire with their cooking techniques and flavor combinations. My advice would be to create your own identity. Create something that makes you and your brand unique.
What do you typically cook at home?
Being a dairy farmer for most of my life and then becoming a Wisconsin Licensed Cheesemaker, I like to challenge myself using fresh ingredients from locally sourced suppliers. We always had fresh beef and pork growing up, so I have a hard time using anything other than locally sourced ingredients for the things that I make.

What’s a food trend that you’re loving right now and why?
I love the trend of going back to the basics. Locally sourced meats and cheeses, fresh local ingredients, cooking with beef tallow instead of oils, all make for a superior quality product. These are things we did when I was a kid and it got lost along the way in the name of convenience. Going back to these ways creates a better tasting product, that is better for you.
What’s the strangest food combination you’ve ever tried? And, did you like it?
Both Bone Marrow and Foie Gras are probably the strangest foods I have tried. They were both prepared and presented perfectly and tasted amazing.
Have you ever cooked for a celebrity? Do have story to tell?
I have not had the pleasure of cooking for a celebrity. I have met Andrew Zimmern about 12 years ago when he visited Milwaukee and had the pleasure of talking to him for a little and giving him some of the cheese we make.

We pride ourselves with our fresh beef smash burgers and hand cut fries. What sets us apart from others is the scratch made condiments (ketchup, mustard, Noble sauce, BBQ sauce, steak sauce, and several others for our burgers of the month) and using local Beef Tallow for our fries that are also dedicated gluten free.
What cocktail or beverage do you enjoy most?
I am a fan of a good gin martini. Extra extra dry, straight up, with pickled mushrooms.
