Tell us about what your morning routine looks like, and how you like to end your day?

I start my day with checking e-mails and preparing for the catering, food truck, and restaurant. Hit the gym for one hour and then back to the restaurant.

Do you have any awards or achievements you’d like to mention?

We have won “Best Tacos” three years in a row, as well as “Best of Jackson.”

Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?

Love what you do! What’s more important is the ingredient and process; the success will come on its own.

What do you typically cook at home? 

Cow tongue (lengua) and other traditional foods. I also like to experiment with BBQ.

What’s a food trend that you’re loving right now and why?

Birria tacos. We give a spin by only using brisket and pan-fried tripe with a fresh arbol sauce.

What’s the strangest food combination you’ve ever tried? And, did you like it?

Avocados and grasshoppers.

What drink do you enjoy most?

Topo Chico.
