Tell us about what your morning routine looks like, and how you like to end your day?

I like to start the day quietly, with a very strong coffee and a quick review of our prep lists. Once I’m at Embark, it’s game on — checking the smoker, tasting meats and sauces, and setting the energy for the kitchen.

Do you have any awards or achievements you’d like to mention?

While we value the awards, our proudest achievement is building a BBQ destination from scratch that brings people together across NJ. Being named one of NJ’s Best BBQ spots is already an honor in itself.

Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?

I didn’t grow up with famous chefs — I grew up watching my family cook with whatever they had and turning it into something amazing. That’s always stuck with me. It taught me that food is about resourcefulness and love more than it is about status.

What do you typically cook at home for yourself or your family? 

Surprisingly, a lot of fish and veggie-forward meals — Chilean sea bass, roasted carrots, grilled mushrooms, and citrus-dressed salads. Gotta balance all that brisket somehow!

What’s a food trend that you’re loving right now and why?

I love that people aren’t afraid to mix it up — gochujang in mayo, za’atar on fries... it’s exciting and way more fun than playing it safe.

What’s the strangest food combination you’ve ever tried? And, did you like it?

I’m pretty open-minded when it comes to food — I like trying new things, even if they sound a little out there. I wouldn’t say I go looking for strange combos, but I’ve definitely had a few surprises that ended up being delicious. Sometimes the unexpected pairings are the ones you remember most.

What cocktail or beverage do you enjoy most?

I’m obsessed with flavored seltzers — a Blood Orange seltzer. It’s crisp, refreshing, and the perfect palate cleanser after a smoky plate of brisket.
