Tell us about what your morning routine looks like, and how you like to end your day?

Arrive at the restaurant by 7am to begin prep for the day. Tend to the smoker and determine our daily needs based on catering, delivery orders and expected patrons for the lunch and dinner crowds. I like to end each day knowing we made all our customers feel like they got a great meal and experience that will keep them coming back.

Do you have any awards or achievements you’d like to mention?

Carolina Brothers Pit BBQ has previously earned 1st place for whole hog and chicken and 2nd place for ribs at the “Memphis in May” contest in Washington, DC.

Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?

My favorite chef is the late Anthony Bourdain. He famously said, “Barbeque may not be the road to world peace, but it’s a start.” He also said, “barbeque is not a cuisine, it’s an obsession.” I agree, the man knew not only food his but his audience as well. My advice for aspiring pitmasters: surround yourself with people who are good at what you’re not. Know your strengths and leverage them. Don’t be afraid to lean on others for help. Also, just work hard and be nice to people!

What do you typically cook at home for yourself or your family? 

Sheperd’s Pie is one of my favorite things to make at home – a family favorite! It's packed with various flavors and textures and is certainly one of my comfort foods.

What’s a food trend that you’re loving right now and why?

The prevalence of food truck rallies and events. It allows us to be exposed to a wide variety of culinary choices and cultural influences. We’re lucky in the Northern Virginia area to have access to a wide range of cuisines.

What’s the strangest food combination you’ve ever tried? And, did you like it?

Years ago, my wife and I were sitting at a sushi bar in Scottsdale, AZ and were intrigued by the evening special which was a spicy tuna roll topped with thinly sliced strawberry. Surprisingly, the combination worked very well. It was a wonderful combination of sweet and spicy.

What cocktail or beverage do you enjoy most?

Simply an ice-cold Miller Lite after a long day at the restaurant.

Have you ever cooked for a celebrity? Do you have a story to tell?

We’re excited that Ashburn, Virginia is the long-time home to the training facility of the Washington Commanders of the NFL. On occasion members of the team will stop by for a great meal! Dance Moms – A New Era (Hulu) is also based in Ashburn, Virginia and recently shot several scenes inside the restaurant.
