Wake my three kids bright and early, collect our farm fresh duck eggs and cook breakfast with the family. Off to the city to rev up our granite pizza ovens and begin the two-day dough process. End the day with stories of the exciting pizza adventures of the day.

Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
Anthony Bourdain, inspired my culinary travels to the far reaches of the world over the past three decades. Try every dish, when in other countries three times! Give your taste buds and the chefs a chance to truly show you the beauty and complexity of all cuisines no matter how bizarre and different they might seem.

What do you typically cook at home?
Perfecting my own version of Chef Chad Robertson’s Tartine Sourdough bread with my grandma’s chicken soup for the soul.
What’s a food trend that you’re loving right now and why?
We have gone around the world and around the world and back again. Heavy focus in Mexico and their street food with the endless complex flavors and creativity. Incorporating these into my pizzas from grilled fresh summer corn elote and house made Spanish chorizo to shaved el pastor pizza with guajillo chili smoked pineapple.
What’s the strangest food combination you’ve ever tried? And, did you like it?
Tequila habanero chocolate truffles. I made these for the first time 25 years ago in culinary school and to this day always reminds me of the endless possibilities with food.
What drink do you enjoy most?
Southern Sweet Tea with SLC Mamachari Kombucha.
Have you ever cooked for a celebrity? Do you have a story to tell?
Yes, and a very big one with an NDA that won’t allow me to share. But another great story and one I can share, in 2007 when I was the executive chef for the Denver West Marriott, I received a call late in the evening from Al Greens’ manager who was on tour with BB King and Eta James. TQ!12.hey we arriving at the hotel late that evening and were hoping to find some food. As I was finishing up a wedding that evening I created a full wedding buffet for them upon their arrival. The next day I was invited to the show at the famous Red Rocks Amphitheatre. During the show I was escorted on stage and had the honor to sit directly behind BB King for the duration of his performance. Simply put was absolutely life changing and incredible in every way.
