Tell us about what your morning routine looks like, and how you like to end your day?
Our day usually starts with a hefty cup of coffee or a dirty chai, a run to the market or restaurant supply store, and assessing what our prep needs are for the day.
Do you have any awards or achievements you’d like to mention?
We were named best food truck by the KQRS Best(est) Listener Poll this year and in 2023, MSP Mag's silver winner for best burger in the Twin Cities. In 2024 we secured the East Side Burger Battle champion title and our fries were voted third best in the entire state by participants of the Star Tribune Minnesota's Best rankings. Winning isn't everything but being recognized by our community is incredibly humbling every time.
Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
Jesse's favorite chef is local burger lord Mik German of 328 Grill. I (Mo) would have to agree. The way he builds community and creates platforms for passionate cooks around him is inspiring. On a non-local level, I am a huge fan of Marcus Samuelsson. We share similar cultural roots and his reconnection with his heritage via food mirrors my own in many ways. Watching his journey has been so affirming to me.

What do you typically cook at home?
I am usually making an Eritrean dish, steak, ful medames, or a stacked breakfast sandwich. Oh, and rice. Lots of rice.
What’s a food trend that you’re loving right now and why?
I am very into the marriage of fast food and fine dining - I've heard the tem fast-fine being thrown around over the last year or so. That's our bread and butter. We've built our concept around that so to see it become more and more legitimized is amazing. People used to tell us we were trying too hard, that making our own American cheese wasn't worth the time. Every element counts, even if it's just a smash burger.
What’s the strangest food combination you’ve ever tried? And, did you like it?
I am all about strange food combos. Jesse will occasionally dip a blueberry bagel into apple juice. I like instant chicken ramen with feta cheese, eggs, and soy sauce. If it works, it works!
What drink do you enjoy most?
We're big on coffee and tea. Jesse drinks way too many Monster Energy drinks. Water is king. Stay hydrated, folks!
Have you ever cooked for a celebrity? Do you have a story to tell?
We have had the opportunity to cook for a few of our favorite podcasters. A few years back, we catered for Tim Heidecker and the Office Hours crew and this past June, we were able to cook for the My Brother My Brother and Me crew. Kind of surreal as these people have provided the soundtrack to our prep shifts for years now. There is a lot of power in just reaching out and asking. You might be surprised by who takes the time to connect with you.
