Tell us about what your morning routine looks like, and how you like to end your day?
My mornings usually start early with a strong cup of coffee and a quiet moment to plan the day ahead. I like to review my kitchen prep list, check in with my team, and make sure everything is running smoothly before service starts. At the end of the day, I wind down by spending time with my family, often over a simple home-cooked meal, and reflect on the highlights of the day.
Do you have any awards or achievements you’d like to mention?
Over the years, I’ve had the privilege of working in several award-winning kitchens and leading amazing teams. My greatest achievement, though, is seeing my team grow and succeed. Back in Germany, my restaurant/hotel was recognized and listed in several culinary guides, which was a great honor.
Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
I’ve always admired Eckart Witzigmann for his incredible culinary talent and the way he elevated German cuisine on the world stage.

My advice to aspiring chefs: never stop learning, stay humble, and remember that passion is just as important as skill.
What do you typically cook at home?
At home, I lean toward comforting dishes—fresh pasta, rustic breads, hearty soups, or a Bavarian-inspired roast with dumplings. Simple, but full of flavor.
What’s a food trend that you’re loving right now and why?
I’m enjoying the rise of locally sourced, seasonal menus. It challenges chefs to be more creative while supporting local farmers and producers.
What’s the strangest food combination you’ve ever tried? And, did you like it?
French fries dipped in a vanilla milkshake—sweet, salty, hot, and cold all at once. Strange? Definitely. But yes, I liked it! That was actually our son’s idea, and now it’s become a fun little family tradition whenever we go out together.
What drink do you enjoy most?
A perfectly pulled espresso is my go-to, but on a hot Texas day, nothing beats a crisp, cold German Radler.
Have you ever cooked for a celebrity? Do you have a story to tell?
Yes, I once had the honor of cooking for the King of Thailand. It was an unforgettable experience—he appreciated the balance of flavors and the cultural touches in the menu, and it reminded me how food can connect people across traditions and backgrounds.
