We sat down with Executive Chef Cory Haswell of O’s Pub & Grill in Auburn, Michigan. Situated in a circa-1908 building that has housed popular gathering spots over the years, O's has continued that tradition as the top local gathering place in Auburn. They proudly grind their burgers daily in-house and heir ingredients consist of premium Black Angus steaks, corned beef, and pastrami.

Tell us about what your morning routine looks like, and how you like to end your day? 

Typically, I like to wake up, have a few cups of coffee, and watch the news to catch up on current events. When I get to the restaurant I do a review from the night before, make my prep sheets and plan for the day ahead.

Usually, things are quite smooth at O's so after my shift, I like to relax and enjoy a couple of beers.

Do you have any awards or achievements you’d like to mention?

I'm hoping to achieve more but yes, the most recent award that I'm very proud of is O's Pub & Grill has won “Best Burger Restaurant” in the State of Michigan. I've also won a few local "Readers Choice Awards" for things like “Best Chili” and “Best Soups.”

Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?

To be honest, I don't really have a favorite chef. There are many great ones but my honest answer would definitely be my Mom! She is the one who taught me when Iwas young and inspired me to take this path. I hope I do a great job and inspire others in the same light with passion.

What do you typically cook at home for yourself or your family? 

Usually my days are pretty long, so I don't do a lot of cooking at home, but when I do, I try to keep ti simple and organic, such as chicken and fresh vegetables, for example.

What’s a food trend that you’re loving right now and why? 

I really love the farm to table trend. I'm a huge fan of using fresh, local ingredients and supporting our local community!

What’s that strangest food combination you’ve ever tried? And, did you like it?

Truthfully, I can't really answer this because I don't really think that there are many strange food creations. Some people think, for example, that peanut butter and jelly burgers are strange, but I like them!

What cocktail or beverage do you enjoy most?

I love a good IPA! Old Nation M-43 IPA is my go to! It's a micro brewery from here in Michigan.

Have you ever cooked for a celebrity? Do you have a story to tell?

When I lived in Sarasota, Florida I cooked for a number of famous athletes, musicians and actors. Being from Michigan and being a huge fan of the Red Wings, meeting and cooking for Scotty Bowman was definitely one that was most memorable.
