We sat down with Executive Chef Ruth Tremblay of 28 North Bar and Lounge at Somerset Lakeside Resort in Bancroft, Ontario, Canada.

Where did you grow up, and where have you traveled to that has helped inspire and shape your cooking philosophy? 

My parents are from Newfoundland, but I was born in Toronto and grew up in the suburb of Scarborough. I have many fond memories of large family gatherings enjoying homecooked meals together. My mom was an excellent cook and I can still smell her homemade bread.

Tell our readers an interesting fact or two about yourself that reflects your cooking style?

I began working in a Greek family restaurant in my 20’s and continued to work with various old school Greek chefs over the years. “Greek Night” is always a favorite.

Tell us about your absolute favorite food and why readers should try it if they haven’t already.

This may sound very simple — but I love all the sights, sounds and flavors of Christmas. I really love to cook and eat a big turkey dinner, including dishes from Newfoundland and a homemade tourtière for my husband, whose family is from Quebec and New Brunswick.

What are three ingredients that you simply couldn’t live without? 

I absolutely love garlic and butter, but I cannot live without the freshest produce available.

We love the art behind plating. What do you love about designing the perfect dish?

We eat with our eyes first. When we see something that looks delicious, it begins the dining experience. Colors, smells and textures all have to come together on the plate.

Tell us about one of the most creative dishes you’ve cooked up?

I love creating with herbs and spices. Often guests will ask what they’re tasting that really brings out the flavors of a dish.

What is one of your greatest accomplishments or awards you've earned?

Becoming the Executive Chef at 28 North has been an accomplishment in itself. We have many international guests from different countries and cultures that I am privileged to cook for and add to their overall dining experience with us.

What are some of the latest trends you’re seeing in top restaurants across the globe?

It is a difficult time in restaurants and I respect reduced portions and waste reduction.

What’s your favorite cocktail or beverage of choice?

I’m not really big on sweet drinks. I prefer a simple vodka with lemon, but my favorite is a good Cabernet or Merlot.

What do you love about being the Executive Chef of 28 North Bar and Lounge at Somerset Lakeside Resort in Bancroft, Ontario, Canada?

I love the opportunity to share my passion for cooking and baking with people from around the world, providing a great dining experience to the local community as well.
