We sat down with Executive Chef Jason Dorweiler of Tori Ramen in Saint Paul, Minnesota. Growing up in his Korean mother's kitchen and embracing a rebellious spirit, Jason ultimately joined the Marine Corps as a “Cook Specialist.” After completing his military duties, he embarked on a culinary journey, working in numerous restaurants throughout the Twin Cities. The fast-paced nature of restaurant life often led to changing jobs frequently.

However, it was through taking entrepreneurial courses in business management and start-ups that Jason gained clarity on the significance of cooking and the restaurant industry, reflecting on his years of hard work in the field.

Tell us about what your morning routine looks like, and how you like to end your day? 

I have 2 huskies that demand their morning walk and depending on how I feel, I either walk them or let them walk themselves in the backyard. This is followed by breakfast usually concocted by whatever leftovers my girlfriend refused to eat. I live “Chopped” on a daily basis.

After the work day its a few drinks at the favorite dive across the street.

Do you have any awards or achievements you’d like to mention?

I've been appreciative for numerous local awards and a few national mentions.

Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?

Advice that I give to cooks that I meet is this: Don't go to cook school, learn through paid experience. Eat out at some local restaurants, stage a few, and learn under someone you appreciate.

What do you typically cook at home for yourself or your family? 

When I do cook proper meals at home, its usually going to be meaningful like Ssam, which is the ultimate form of lettuce wraps that exist. if Im cooking simple late night food, its usually pasta with sauce made from random cupboard ingredients.

What’s a food trend that you’re loving right now and why? 

Is it a trend if it doesnt go away? I like seeing Korean influence on modern day menus.

What’s that strangest food combination you’ve ever tried? And, did you like it?

Turtle soup from Brennan's in New Orleans. Try it if you are there, it may change your life.

What cocktail or beverage do you enjoy most?

New distilleries are on the rise and Im adventurous, so I gravitate towards trying new and interesting spirits. My cocktail of choice is a Johnny Jump Up.

I cook for my mom all the time!
