We sat down with Executive Chef Nimma Reddy of Paheli Modern Indian Cuisine in Wayne, New Jersey. Paheli offers an authentic dining experience that showcases the rich flavors and traditions of Indian cuisine. Tell us about what your morning routine looks like, and how you like to end your day?
My morning starts early with a refreshing cup of tea and a brief meditation to center myself. Spend time in my temple at home so I can reflect upon myself, my family and my journey. I then review the day's menu and ensure everything is in order before heading to one of my restaurants.
At the end of the day, I am always home with my family and I like to unwind by reading newspapers, current affairs and new food related news.
Do you have any awards or achievements you’d like to mention?
Throughout my career, I have had the honor of working with esteemed brands and chefs from various parts of the world. These experiences have allowed me to refine my skills and contribute to creating memorable culinary experiences. Have over the years collected many accolades. I believe it is not just my achievement but that of the entire kitchen and dining teams of our restaurants. Paheli when launched was recognized as the top 25 restaurants in NJ, among the list were some really good places like Ramsey Gordon's new location in Atlantic City. The very next year one of our Manchurian dishes was recognized as the top 50 dishes to try in 20023. Most recently we were recognized as the Best of NJ. Indian Restaurants in Passaic County.
Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
I greatly admire not but many chefs, Chef Sanjeev Kapoor, Chef Vikas Khanna for there creativity and innovation. My advice to aspiring chefs is to never stop learning and to embrace creativity. Culinary arts is a field where passion and perseverance are key. My GURU was Arun Kakkar who trained me well and I had the pleasure of working with him for many years. He also came and launched our Paheli Indian Cuisine.
What do you typically cook at home for yourself or your family?
At home, I enjoy cooking comfort food, especially traditional Indian dishes. There's something special about the flavors and aromas that remind me of my roots.
What’s a food trend that you’re loving right now and why?
I am currently loving the farm-to-table trend. It promotes sustainability and allows us to work with fresh, locally sourced ingredients, which enhances the quality and taste of our dishes. Another passion I have is to create an all vegan and vegetarian restaurant.
What’s that strangest food combination you’ve ever tried? And, did you like it?
One of the strangest combinations I've tried is chocolate, avocado and blue cheese. Surprisingly, the sweetness of the chocolate paired beautifully with the tanginess of the cheese and rich taste of avocado creating an unexpected yet delightful flavor. Another another one with Thai curries, sautéed garlic quinoa, and steamed morning glory.
What cocktail or beverage do you enjoy most?
I enjoy lassi, tea and do not drink, just never got into it.
Have you ever cooked for a celebrity? Do you have a story to tell?
Yes, I have had the privilege of cooking for several celebrities during my tenure. I have had the privilege to serve the Clintons for many years in New York. I have also had the opportunity to serve many dignitaries from India, most recently our Chief Minister of Telangana.
