Where did you grow up, and where have you traveled to that has helped inspire and shape your cooking philosophy? 

I grew up in a rural country area in Australia and spent time working in Thailand. Australia is very multi-cultural and has a huge Southeast Asian influence.

From the hundreds of chefs I’ve worked with around the world reflects my style. I love so many styles of food, so I incorporate an eclectic mix on my menus.

Tell us about your absolute favorite food and why readers should try it if they haven’t already.

My favorite dish is Chinese Roast Suckling Pig over rice. It’s so simple, yet complex at the same time—that perfectly crisp skin is addictive.

What are three ingredients that you simply couldn’t live without? 

I could not live without bread, it has so many uses. Herbs, cilantro specifically. I also need some form of pasta or noodles in my life.

We love the art behind plating. What do you love about designing the perfect dish?

I firmly believe plating is an art form. I enjoy the challenge, that no matter what style of food whether fine dining, comfort or rustic—making it visually appealing.

Tell us about one of the most creative dishes you’ve created?

Currently on our menu, we have brought back our Kangaroo Salad. It is done in a Thai-style salad. It’s very herbaceous, refreshing, and it’s a great way to introduce people to taste kangaroo for the first time.

What is one of your greatest accomplishments and/or recent awards you've earned?

For me it’s an ongoing thing, every time we get new customers and as they are leaving they think myself and my chefs for a great meal. It makes it worthwhile.

What are some of the latest trends you’re seeing in top restaurants across the globe?

I think the artistry of food is getting impressive, these restaurants are putting as much thought to how the story of the food is delivered to guests—really amazing presentation of dishes.

What’s your favorite cocktail or beverage of choice?

Gin gimlet, all day.
