Where did you grow up, and where have you traveled to that has helped inspire and shape your cooking philosophy? 

I have a deep-rooted passion for meat and cooking. Growing up in southern Brazil, near Uruguay and Argentina, I always took pleasure in selecting, preparing, and cooking the best cuts of meat. One of my specialties is the Churrasco, a mouthwatering barbecue tradition that hails from southern Brazil, Argentina and Uruguay.

Tell our readers an interesting fact or two about yourself that reflects your cooking style?

Twenty years ago, I received a golden opportunity to leave Brazil and venture to the United States. My mission? To establish the prestigious JW Marriott Resort & Spa in Phoenix, Arizona. For a decade, I dedicated myself to this endeavor, living in six different states and solely working in top-notch hotels and resorts. Along the way, I immersed myself in various kitchen atmospheres, encountered diverse cultures, and collaborated with celebrated chefs. These valuable experiences sparked a passion within me to embark on a culinary journey that celebrates the "Farm to Table" cooking style.

Tell us about your absolute favorite food and why readers should try it if they haven’t already.

My ultimate culinary delight is without a doubt meat in all its forms. Whether it's succulent braised short ribs or a delectable fried premium steak, I simply can't resist. My expertise in slow cooking short ribs even caught the attention of the prestigious San Diego Food & Wine Festival.

What are three ingredients that you simply couldn’t live without? 

I simply cannot live without the finest sea salt, extra- virgin cold pressed olive oil, and freshly ground black pepper. These essential elements elevate any dish to unparalleled heights of flavor.

We love the art behind plating. What do you love about designing the perfect dish?

Creating the perfect dish requires careful consideration. Fresh, seasonal, and local ingredients are essential. The dish must be prepared following cooking principles. Finally, it should be served directly from the kitchen to the plate, ensuring the best experience for our guests.

Tell us about one of the most creative dishes you’ve created?

I proudly present one of my most innovative creations: Smoked Beef Cheek Tacos. This mouthwatering dish took center stage at the Miami Food Network Festival in 2013, specifically at the Thrillist's BBQ & Blues event. We skillfully crafted over 2000 tacos from scratch, delighting our enthusiastic crowd.

What is one of your greatest accomplishments and/or recent awards you've earned?

My proudest achievement: receiving my diploma and the prestigious Golden Medal from the revered Les Amis D'escoffier Society of New York.
