1. Tell us about what your morning routine looks like, and how you like to end your day?
My morning starts with coffee with my wife as we catch up on what our day is going to look like. This is followed by walking our dog and enjoying some quiet time together before we both head off to work.
I like to end my day by sitting on the patio and enjoying a cold beer with friends.
2. Do you have any awards or achievements you’d like to mention?
I received an award for my ability to keep my team cheerful even in the most stressful of situations from a craft store I used to work at. Although it's not directly related to cooking, I believe this skill has carried over into the kitchen. There's always a lot of singing and laughing going on in the kitchen at Zin.
3. Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
Jacques Pepin is my favorite chef because of his ability to create delicious dishes using leftovers or typically unused ingredients.
My advice for aspiring chefs is to not be afraid to try new things just because they are not considered “normal.”
4. What do you typically cook at home?
My wife and I love shepherd’s pie, and after a long day it is just simple, comfort food.
5. What’s a food trend that you’re loving right now and why?
Dehydrating of all things. Pushing the envelope to what can and can not be dehydrated is a fun adventure.
6. What’s the strangest food combination you’ve ever tried? And, did you like it?
Chocolate avocado hummus. It was odd to the palette at first, but it grew on me.
7. Have you ever cooked for a celebrity? Do you have a story to tell?
I've had the pleasure of cooking for Priscilla Presley, Sandra Bernhard, Abi Carter, and many more. However, what truly brings me joy are the local patrons and regulars who visit to savor my food and partake in our monthly wine dinners.

Dr. Pepper wins every time.

At Zin, we take pride in using only the freshest ingredients to prepare our food. We make every dish from scratch and strive to locally-source our ingredients from the growers in and around our valley. We are dedicated to putting our heart and soul into every dish we serve. I am especially proud to work with a female owner, a female sous chef, and a predominantly female kitchen staff in a restaurant that has been here for 20 years. It's empowering to be part of a team of strong women in Palm Springs, California.
