Tell us about what your morning routine looks like, and how you like to end your day?
I start my day at home getting our 3 kids off to school, ages 16, 14 and 8. Typically hit the ground running. I live just a few blocks from our bbq trailer and so once I get the house in order, emails answered, and any other business done at home, then I head over there. Start the day there by putting either brisket, pork butts, sausage or ribs on the smoker, or taking them off if they cooked overnight. We are open Wed-Sat 11-8 so I am there until 8ish, unless I am wrapping meat to cook overnight, then it's a bit later. Love to end my day with a Titos cocktail, my husband is a Bud light man. He helps out when he is home but he works on the road building power lines.
Do you have a favorite chef that you look up to and what advice would you give to aspiring chefs?
My husband, Adam, is a huge triple D fan. He always has a suggestion that he watched on Diner, Drive-ins and Dives so I guess our fav chef would be Guy Fieri.
What do you typically cook at home for yourself or your family?
We cook a lot on the grill at home. Love a good steak. While he is adventurous in the food department, I am a very picky eater. Textures are a thing for me. He on the other hand loves to slurp down oysters or just about anything.

I think what got me started here in Idaho was that when we moved here we got married and borrowed a huge smoker for our wedding. There was no food here in our tiny town of 200 people so I went for it. I grew up in Texas where my mother raised 4 kids by selling BBQ. She had her own place before she passed in 2002. 4 of her sisters have sold bbq all across Texas with great success, so I had some good mentors. My mother is why I am so passionate about what I do. So much so that I will drive to Texas, 20 hours, to get the same mesquite wood that they all use there. I do think it puts a great flavor on the meat and sets us apart from everyone here in Idaho, as I can claim to be authentic Texas BBQ, in Idaho. Our little town has grown since we've been here. We get lots of traffic heading up to the many beautiful areas all around us. There is a huge national park close by, a ski resort with a lake in the summer months to enjoy on the mountain. That is why our small town gets so much traffic and brings in lots of business for our small operation. Even though we are mobile, we have had such great success that we haven't moved our trailer in 8 years now. I have had people drive Hours to come eat at our place, so I better be here when they come. We have a great family friendly outdoor area that seats up to 90 people. We have a stage where we have live music and an All You Can Eat Catfish fry once a month (homemade hushpuppies) and the place gets packed. It is suggested to bring a chair and enjoy the campfires and rose garden area. You will see the local wildlife mosey through the place daily.
