Where did you grow up, and where have you traveled to that has helped inspire and shape your cooking philosophy?
Born and raised in St. Croix, went to New York after Hurricane Hugo where I saw so many Caribbean restaurants which inspired me to incorporate my Virgin Islands twist to traditional recipes.

Love to fish and farm.

Favorite food to eat is Beef Lasagna because it's a recipe I got from my dad who is also a chef.

What are three ingredients that you simply couldn’t live without?
Fish, ground provisions and coconuts.
We love the art behind plating. What do you love about designing the perfect dish?
Proper placement of protein, starch, vegetables, and color.

Passion Fruit Conch Ceviche.

Farm-to-table.
