Where did you grow up, and where have you traveled to that has helped inspire and shape your cooking philosophy?
I have lived in Vancouver, British Columbia and Richmond, Virginia most of my life. They are both diverse cities many styles of culture and cuisines. I am well-traveled, as my mother works for Air Canada.
Tell our readers an interesting fact or two about yourself that reflects your cooking style?
Keep it simple, start with a great product, hit all the flavor sensory on the tongue—sweet, salty, bitter, sour, and umami.
Tell us about your absolute favorite food and why readers should try it if they haven’t already.
A bowl of ramen, Tsukemen-style—which is a simple dish, but packs a flavor bomb.
What are three ingredients that you simply couldn’t live without?
Preserved fish and seafood, lemon, and any type of noodle.
We love the art behind plating. What do you love about designing the perfect dish?
Trying to chase down perfection and the journey to get there. The sense of accomplishment is amazing.
Tell us about one of the most creative dishes you’ve created?
Trying new flavor profiles—most chefs borrow ideas and concepts, and try to make it their own.
What is one of your greatest accomplishments and/or recent awards you've earned?
Graduating from the University of Victoria, obtaining my degree in commerce.
What are some of the latest trends you’re seeing in top restaurants across the globe?
Less is more—finding a new cuisine and exploring new flavor profiles; using dessert applications into savory components.
What’s your favorite cocktail or beverage of choice?
Anything wet… Greyhound cocktail, which is made with fresh-squeezed grapefruit juice.
