Where did you grow up, and where have you traveled to that has helped inspire and shape your cooking philosophy?
I was born and raised in Rome, Italy where good food and good wine are a big part of the culture.

I’m big on traditional cuisine. I love to garden and use the best ingredients available. My cooking style is simple, but focused on what’s in season.
Tell us about your absolute favorite food and why readers should try it if they haven’t already.
Pasta made from scratch is my favorite food. I cook pasta at my restaurant in so many different ways and people love it.
What are three ingredients that you simply couldn’t live without?
Hot cayenne pepper, extra virgin olive oil and garlic.
We love the art behind plating. What do you love about designing the perfect dish?
I like balancing the colors, heights and textures.
Tell us about one of the most creative dishes you’ve created?
I have fun making creative desserts. I made a chocolate hazelnut semifreddo bomb covered in chocolate ganache, topped with a caramel sugar composition.
