Where did you grow up, and where have you traveled to that has helped inspire and shape your cooking philosophy?
I spent my formative years in Monte di Procida, where I was born, a town in the Southern region of Italy near the picturesque Amalfi coast. Drawing inspiration from the rich culinary traditions of my hometown, I embarked on a culinary journey that led me to work in the enchanting Cinque Terre region in Liguria. Further broadening my expertise, I dedicated over a year to refining my skills in the culinary scene of Sardinia. In pursuit of new experiences, I moved to the United States, where I had the opportunity to contribute to diverse culinary landscapes. From North Carolina to the vibrant culinary tapestry of Florida, and finally, the dynamic culinary environment of Pennsylvania, each locale has played a pivotal role in shaping and enriching my cooking philosophy.
My culinary philosophy is a mosaic of influences, blending the authenticity of Italian traditions with the diversity and innovation inherent in American gastronomy. Through my journey, I have cultivated a deep appreciation for the interconnections of regional flavors, techniques, and cultural nuances, which collectively contribute to my distinctive approach to the culinary arts.

Recently, I crafted a culinary creation I've named “Amalfi Coast.” This dish is a manifestation of my culinary creativity, featuring a delightful combination of creamy limoncello-infused sauce and the perfect combination of seafood. The inspiration behind this creation hails from the vibrant flavors of the Amalfi Coast, where the zesty essence of lemons and the abundance of fresh seafood converge. The dish unfolds as a symphony of textures and tastes, with the creamy limoncello sauce imparting a luscious richness to the seafood medley. Each bite encapsulates the citrusy brightness of lemons with the briny freshness of the sea. I am honored to hold the title of “Italian Cuisine Ambassador,” a recognition that underscores my dedication as a discerning interpreter of Italian cuisine. This designation reflects my meticulous appreciation for culinary techniques, ingredients, and trends, transcending the boundaries of Italian essence while embracing the narratives of diverse gastronomic traditions.
Additionally, I have had the privilege of sharing my expertise as an educator. I taught Italian Cuisine and Culture at High Point University in North Carolina. These experiences, both as an ambassador and an educator, underscore my commitment to promoting and preserving the artistry and cultural significance of Italian cuisine on both a local and global scale.
What are some of the latest trends you’re seeing in top restaurants across the globe?
One notable trend in the food and beverage industry that I've observed is a shift away from the traditional family-oriented approach to cooking, with a growing preference for fast-food-style processes. While this trend has gained momentum, my culinary philosophy remains rooted in tradition and the art of homemade dishes. I believe in preserving the authenticity and depth of flavor that comes with traditional, home- cooked meals, advocating for the enduring value of shared family experiences around the dining table. Despite evolving trends, I am dedicated to upholding the essence of traditional cooking and promoting the importance of savoring meals crafted with care, time, and a genuine connection to culinary heritage.
What’s your favorite cocktail or beverage of choice?
My preferred beverage of choice is wine, and when it comes to selecting favorites, again I have a particular affinity for wines that embody the essence of my Italian heritage. As a red wine enthusiast, I favor the robust and flavorful notes of Primitivo, a variety deeply rooted in the region I am from. Its rich character and connection to my hometown make it a perennial favorite. For white wine, Falanghina holds a special place in my heart. This varietal, also cultivated in my native region, offers a delightful combination of crispness and aromatic complexity. Embracing these wines is not just about enjoying a beverage but savoring a sip of the terroir and cultural heritage from which they originate, adding an extra layer of meaning to each glass.
